Discipline is key. Great canning is all about the little details. Leave some room below the headspace of each jar before it is sealed to allow some room for the food to expand while cooking. Wipe the jar rim before it is sealed as food debris will prevent sealing, as will cracks in the rim. Check the gauge and rubber gasket on the pressure canner to make sure these are in order.
